Super delicious Snickerdoodles!!

Hey, hey! It's Thursday! Almost the weekend.

Just keep swimming, just keep swimming...

Anyway, as promised, here is the recipe for the super delicious Snickerdoodles that I mentioned yesterday.

Snickerdoodle Cookies

1 cup unsalted butter (2 sticks)- room temperature
1 1/4 cups sugar
2 eggs
2 3/4 cups white flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt

For the cinnamon/sugar coating:
1-2 tbsp sugar
1-2 tbsp cinnamon

Preheat oven to 400 degrees.

Using a mixer (standing or hand mixer, doesn't matter.- I used my hand mixer and it worked fine) mix the butter and sugar.  Add eggs one at a time, mixing well in between.

Stir in all dry ingredients & Mix well.

Roll dough into small balls- like large gumball or ping pong ball size.  Roll the dough balls in the mixture of cinnamon/sugar to coat.

Place on ungreased cookie sheet.  Do not flatten.

Bake at 400 degrees for 8-10 min.  I baked mine for 8 and they turned out perfect.  If you over bake them, they get hard.

Should be soft and delicious! :-)
